When you hear the word “congee,” you probably picture a steaming bowl of savory rice porridge topped with minced pork, ginger, and a splash of soy sauce. But if you ever try “Laba Congee” (or Babao Zhou - 八宝粥), the dark horse of Chinese street food... toss all your old assumptions out the window! This dish is actually a "rich, sweet grain dessert"—smoothly sweet, delightfully chewy, and incredibly addictive to eat.

The name “Babao” (八宝) literally translates to “Eight Treasures,” referring to the eight auspicious ingredients simmered until melt-in-your-mouth tender. (Usually, this includes black sticky rice, red beans, mung beans, Chinese jujube, lotus seeds, dried longan, Job's tears, and walnuts). It has a subtle, naturally sweet taste, giving off a vibe very similar to Thailand's warm black sticky rice pudding mixed with Tao Tung (sweet herbal soup).

But did you know? Before becoming a thousand-year-old auspicious dish eaten worldwide, this bowl of congee had a pretty wild backstory. The most popular folklore tells of a hard-working peasant couple who amassed a fortune and a barn overflowing with food. However, they had a lazy, good-for-nothing son who did nothing but squander his parents' wealth. After his parents passed away, and a brutal winter storm hit, trapping everyone indoors, the spendthrift son and his wife suddenly realized, "The pantry is completely empty!"

Starving, the couple had to scrape every nook and cranny of the barn. They ended up with a handful of sticky rice from the bottom of a barrel, some red beans, lotus seeds, and dried jujubes dropped on the floor—exactly eight ingredients in total. They threw everything into a pot to make a thick, sticky porridge just to survive. When the villagers found out, they turned this dish into a tradition to eat every 8th day of the 12th lunar month, serving as a life lesson for their children: "Work hard and appreciate your food, or you'll end up scraping the bottom of the barrel."
